Recipies #1: Squimish about squash
I’ll admit it. I’m just plain weird. I like squash.
Now for those who do not, but think that it is important to at least try to acquire a taste because you think that it will be good to help you lose weight (and your right) here is a recipe that you can try. This is one of my own, it cooks up in about 10 minutes and is extremely flavorful.
How much of each ingredient is somewhat up to you. I test things while I eat to make sure they taste right to me that day. So I rarely make it exactly the same each time, but each time it tastes great. So here you go:
Cut up into bit size pieces equal portions of Zucchini and Yellow Squash. Cut up enough for however many servings you are going to do.
Remember – this is a quick recipe to make so do not make more than you will eat at a setting. I personally do not think that vegetables ever taste that great reheated. And if you make too much you may be tempted to eat too much and that wont help in our weight loss goals. Keep the portions under control (be sure to read the entry on portions when you get a chance).
Add as much garlic as you like. Typically I will add several cloves – but again, we have already established that I’m insane – so add that much to your own peril I suppose:) But garlic is supposed to help you lose weight as well – so enjoy it.
Then add about 1/3 as much Red Onion as you have squash.
Putt all of this in a nice frying pan, and spay it all with a little olive oil. I like to use the pump sprays. This gets a good light coat on without adding way to much oil to a recipe.
Now, turn on the burner to medium heat. And saute the vegetables until the onion starts to turn clear and the squash start to brown a little.
Now add about 3 glugs of white wine (if your like me and do not drink alcohol do not fret it all burns off and just leaves the flavor)
Add about 1/2 as much lite soy sauce (1-2 glugs).
And about 1 glug ot Balsamic vinegar.
Now, the amount of liquid that you add here will be determined based on the amount of veggies that you are putting in. The amounts above are for 2 servings. Basically you want the liquid total to cover about 1/2 way up the veggies. Most of the liquid if going to boil off and create a nice reduction sauce.
Now stir this until all the alcohol smell is gone (it will only take 3-5 minutes) and the liquid has been reduced to approximately 1/2 its volume.
Remove from that heat and add red pepper flakes to taste and some Butter Buds
Now it is time to enjoy!
This is a great tasting, very low calorie, low fat food that will nonetheless fill you up and possibly even make you happy to have eaten squash. I know that I have converted a few people over the past few weeks with this one. I love losing weight while eating great food. Its the only way to go.

We just moved into a new home recently and never got the new garden going. but the plans are underway for this next year.
But we have had very generous neighbors that have given me most of the veggies I need.
I agree about the lightness of the food. I feel like I can still move after eating all the veggies I can stand. If I do that with anything else I just want to sleep.

Matt, do you get a chance to grow your own squash….umh…best ever….Vegetables are my favorite of foods…much better for your system…don't feel so heavy afterwards…..then just add your spices….and you are good to go=) Like your like to garlic article.
